# Expert Advice:

01 -
  • It looks like you spent hours in the kitchen when really you just melted some chocolate and watched marshmallows toast.
  • Everyone gets to dip their own crackers, so it feels interactive and fun instead of like someone serving you dessert.
  • The cast iron keeps everything warm and looks impressive sitting on the table, which is half the battle with holiday entertaining.
02 -
  • The moment those marshmallows come out of the oven is when they're perfect, so don't overbake them trying to get them darker—a light golden brown is exactly right, and they'll continue cooking slightly as they cool.
  • If you don't have a 10-inch cast iron skillet, a slightly smaller one works fine, you'll just have taller marshmallows, and a slightly larger one spreads everything thinner but still works; just adjust your baking time slightly.
03 -
  • Don't use a cold cast iron skillet straight from the cabinet—let it sit out for a few minutes so the chocolate and butter don't cool down before everything melds together.
  • If your marshmallows aren't covering the chocolate completely, press them down gently as you arrange them so you don't have bare chocolate patches where things might burn.
