01 - 2 cups cooked chicken breast, shredded
02 - 1/3 cup buffalo wing sauce
03 - 2 tablespoons unsalted butter, melted

04 - 8 slices sourdough or country white bread
05 - 1 1/2 cups shredded sharp cheddar cheese
06 - 1/2 cup shredded mozzarella cheese
07 - 4 tablespoons unsalted butter, softened
→ Optional Additions
08 - 1/4 cup blue cheese crumbles
09 - 1/4 cup thinly sliced green onions
10 - Ranch or blue cheese dressing, for dipping
# Method:
01 - In a medium mixing bowl, combine shredded chicken with buffalo wing sauce and melted butter. Toss until the chicken is evenly coated; set aside.
02 - Arrange bread slices on a cutting board and spread softened butter on one side of each slice.
03 - On the unbuttered side of 4 bread slices, arrange shredded cheddar and mozzarella cheeses. Spoon buffalo chicken mixture over the cheese, and optionally sprinkle with blue cheese crumbles and green onions.
04 - Top with remaining bread slices, placing the buttered side outwards for grilling.
05 - Heat a large skillet or griddle over medium heat. Place sandwiches in the pan and cook for 3–4 minutes per side, gently pressing until bread is golden brown and cheese is melted.
06 - Remove the grilled sandwiches from the skillet and let rest for 1 minute. Cut in half and serve warm, accompanied by ranch or blue cheese dressing if desired.
