01 - 4 slices country-style or sourdough bread
02 - 4 oz fresh mozzarella cheese, sliced
03 - 2 tablespoons unsalted butter, softened

04 - 1 large ripe tomato, sliced
05 - 2 tablespoons basil pesto (store-bought or homemade)
06 - Handful fresh basil leaves

08 - Freshly ground black pepper
# Method:
01 - Evenly coat one side of each bread slice with basil pesto.
02 - Place half of the mozzarella slices on the pesto-coated side of two bread slices.
03 - Layer tomato slices, fresh basil leaves, and a pinch of sea salt and black pepper over the mozzarella.
04 - Top with remaining mozzarella slices and cover with the other two bread slices, pesto side down.
05 - Spread softened butter on the outside surfaces of each sandwich to ensure a golden crust.
06 - Heat a grill pan or skillet over medium heat until warm.
07 - Place sandwiches on the grill pan or panini press and cook 3 to 4 minutes per side, pressing down gently with a spatula if using a skillet, until bread is golden and cheese melts.
08 - Remove sandwiches from heat, let rest for 1 minute, then slice and serve warm.
