# Method:
01 - Combine flour, baking powder, kosher salt, and ground black pepper in a large bowl. Whisk until evenly blended.
02 - In a separate bowl, whisk eggs and milk together until well mixed.
03 - Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
04 - Gently fold in corn kernels, shredded cheddar cheese, and chopped scallions until evenly distributed.
05 - Heat 1 inch vegetable oil in a large heavy-bottomed skillet over medium-high heat to 350°F.
06 - Scoop batter by tablespoonfuls and carefully drop into hot oil. Avoid overcrowding the skillet.
07 - Fry fritters for 2-3 minutes per side, flipping halfway, until golden brown and crisp.
