01 - 10.6 oz dried wheat noodles or ramen noodles
02 - Gel food coloring, assorted shades (pink, blue, yellow, green; gel preferred for intensity)
→ Cloud Sauce
03 - 3/4 cup whole milk or unsweetened plant-based milk
04 - 4.2 oz cream cheese or vegan cream cheese
05 - 1 tablespoon unsalted butter or vegan butter
06 - 2 tablespoons grated parmesan cheese or nutritional yeast
07 - 1 teaspoon cornstarch
08 - 1/4 teaspoon salt
09 - 1/4 teaspoon ground white pepper

# Method:
01 - Fill a large pot with water and bring to a rolling boil. Divide the hot water into separate heatproof bowls, one for each color you wish to use.
02 - Stir a small amount of gel food coloring into each bowl, mixing thoroughly until the desired shades are achieved.
03 - Divide noodles into equal portions. Submerge each portion in its colored boiling water and cook for 2–3 minutes less than the package instructions. Transfer noodles to a colander, rinse under cold running water to halt cooking, and set aside in separate bowls.
04 - Melt butter in a medium saucepan over medium heat. Add cream cheese, blending until smooth with a whisk.
05 - Whisk in milk, parmesan, cornstarch, salt, and white pepper. Cook, stirring constantly, until thickened and velvety, about 5 minutes.
06 - Gently fold colored noodles into the sauce, keeping colors as distinct as possible for a cloud effect, or lightly swirl for a marbled presentation.
07 - Plate noodles immediately. Top with scallions, toasted sesame seeds, and optional edible flowers or microgreens.
