Quick Shrimp Grilled Cheese (Printer View)

Garlic shrimp and melted cheeses layered on toasted sourdough for a rich, flavorful sandwich experience.

# Components:

→ Shrimp

01 - 7 oz raw shrimp, peeled and deveined
02 - 1 tablespoon unsalted butter
03 - 2 cloves garlic, minced
04 - 1 tablespoon fresh parsley, chopped
05 - Pinch of salt and black pepper

→ Sandwich

06 - 4 slices sourdough bread
07 - 2 tablespoons unsalted butter, softened
08 - 3.5 oz mozzarella cheese, shredded
09 - 3.5 oz sharp cheddar cheese, shredded
10 - 1 tablespoon mayonnaise (optional)

# Method:

01 - Melt 1 tablespoon butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and cooked through. Stir in parsley, then remove from heat.
02 - Butter one side of each bread slice. Place two slices, buttered side down, on a surface. Layer half the mozzarella and cheddar cheeses, then evenly distribute the cooked shrimp. Top with remaining cheese and the other bread slices, buttered side up.
03 - Heat a large non-stick skillet or griddle over medium-low heat. Optional: spread mayonnaise on the outside of the bread for extra crispiness. Cook sandwiches for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
04 - Remove sandwiches from skillet, let rest for 1 minute. Slice in half and serve immediately.

# Expert Advice:

01 -
  • It's the kind of sandwich that makes you feel like you're treating yourself, even on a weeknight scramble.
  • The garlic butter shrimp elevates a childhood comfort food into something genuinely crave-worthy.
  • Two cheese varieties create a flavor complexity that keeps each bite interesting.
02 -
  • Pat your shrimp completely dry before they hit the pan—any surface moisture turns into steam and prevents a proper sear.
  • Don't skip the resting period; it's the difference between a neat slice and a cheese-and-shrimp mess.
03 -
  • Use a griddle instead of a skillet if you're making both sandwiches at once—they cook evenly and you can flip them both simultaneously.
  • Room-temperature shrimp cook faster and more evenly than cold ones straight from the fridge, so prep them a few minutes before cooking.
