05 - ⅓ cup walnut halves, roughly chopped

# Method:
01 - Preheat oven to 400°F and line a baking dish with parchment paper.
02 - Place pear halves cut side up in the prepared baking dish.
03 - Drizzle pears with honey or maple syrup, then sprinkle evenly with cinnamon and drizzle with vanilla extract.
04 - Roast pears in the oven for 22 to 25 minutes until tender and lightly caramelized.
05 - Remove from oven and allow pears to cool slightly.
06 - Divide Greek yogurt evenly among four serving dishes.
07 - Top each portion of yogurt with a roasted pear half, then sprinkle with chopped walnuts and drizzle extra honey or maple syrup if desired.
08 - Garnish with fresh mint leaves if using, and serve warm or at room temperature.
