# Method:
01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Toss potato rounds with olive oil, salt, and black pepper. Arrange in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway until golden and tender.
03 - Heat olive oil in a skillet over medium-low heat. Add sliced onions, salt, and sugar. Cook, stirring frequently, for 20-25 minutes until deep golden and caramelized. Stir in balsamic vinegar, cook for an additional minute, then remove from heat.
04 - Combine cream cheese, Greek yogurt, mozzarella, garlic powder, salt, and pepper in a bowl. Mix until smooth.
05 - Top each roasted potato round with a dollop of cheese mixture, followed by a spoonful of caramelized onions.
06 - Return assembled potatoes to oven for 5 minutes to warm cheese through.
07 - Remove from oven, sprinkle with chopped chives, and serve warm.
