01 - 1 sheet ready-rolled puff pastry (approximately 8.8 oz)

02 - 2.1 oz sundried tomatoes in oil, drained and finely chopped
03 - 1.8 oz pitted green olives, finely chopped
04 - 1 oz grated Parmesan cheese
05 - 1 egg, beaten (for brushing)
06 - 1 tbsp fresh parsley, finely chopped (optional)

07 - Fresh basil leaves (optional)
# Method:
01 - Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
02 - Unroll the puff pastry on a lightly floured surface.
03 - Using a star-shaped cookie cutter, cut approximately 24 stars and transfer onto the prepared baking tray.
04 - Brush each star lightly with the beaten egg to promote browning.
05 - In a small bowl, mix the chopped sundried tomatoes, olives, and grated Parmesan cheese.
06 - Spoon a small amount of the topping mixture onto the center of each star, gently pressing to adhere.
07 - Bake for 12 to 15 minutes until the pastry is puffed and golden.
08 - Cool slightly, then sprinkle with parsley and garnish with basil leaves if desired. Serve warm or at room temperature.
