- Optional Fillings: 1/4 cup (30 g) chopped green onions, 1/4 cup (30 g) diced red bell pepper, 1/4 cup (30 g) sliced black olives
- For Serving: Sour cream, Salsa
Instructions
- Step 1:
- Using a sharp knife or cookie cutter, cut snowflake patterns into 2 of the tortillas. These will be your tops.
- Step 2:
- Place the remaining 2 whole tortillas on a work surface. Evenly sprinkle mozzarella and cheddar cheeses over each leaving a small border around the edges. Add any optional fillings if desired.
- Step 3:
- Cover each with a snowflake-cut tortilla.
- Step 4:
- Heat a large nonstick skillet over medium heat. Carefully transfer one quesadilla to the skillet. Cook for 23 minutes until the bottom is golden and the cheese begins to melt.
- Step 5:
- Carefully flip and cook the other side for 23 minutes until golden and the cheese is fully melted.
- Step 6:
- Remove from skillet repeat with the second quesadilla.
- Step 7:
- Let cool slightly then cut into wedges. Serve with sour cream and salsa.
